Here i come with very easy and quick tiffin recipe for kids as well as elders. When there is no time, no vegetables in your fridge just pick up few potatoes, Capsicum and toss it with easily available ingredients at home.
Ingredients-
Potato - 4-5 small size (Peeled, Chopped & Washed)
Capsicum - 1 medium size (Chopped & Washed)
Onion - 1 small chopped
Garlic - 6-7 cloves
Curry Leaves
Asafoetida , Salt, Oil
Cumin Seeds, Mustard Seeds
Turmeric Powder, Red Chilli Powder
Cumin Powder, Coriander Powder
Saunf / Fennel Seeds Powder (Optional)
Coriander for Garnishing
Directions-
Heat oil in Pan/Wok. Once the oil is hot, add Mustard Seeds, Cumin Seeds, Garlic and allow it splutter.
Now add curry Leaves, Asafoetida, Onion & Salt.
Saute it well for 2-3 mins.
Add Potatoes and Capsicum.
Mix it well and saute it on high flame for 1-2 minutes.
Add Turmeric Powder,Red Chilli Powder, Cumin Powder, Coriander Powder, Saunf Powder.
Mix it well and cook it on low flame for 12-15 mins.
Once cooked properly, garnish it with some finely chopped Coriander.
