Immunity Booster Recipe 1 - Peanut Laddu with Flax Seeds and Pumpkin Seeds

Healthy way to satisfy your sweet tooth and at the same time boost your immune system.
Interesting right? As i have a habit of experimenting in my kitchen, this time i have added immunity boosters to my laddus - Flax Seeds and Pumpkin Seeds. Yes, you heard it right, i have given twist to a regular peanut laddu recipe and added few more super foods to it. These foods should be introduced in a diet to help developing immune system of young children.

They are packed with full of Nutrients, Omega-3 Fatty Acids, Antioxidants, Minerals and Essential Vitamins.
Iron from Flax Seeds plays important role in helping your body fights infection by ensuring your immune system gets enough oxygen.
Do you know the Health Benefits of Pumpkin Seeds?
Great source of Omega-3 Fatty Acids and Essential Minerals such as Zinc, Magnesium.
Magnesium - helps to maintain healthy heart.
Zinc - helps in improving immune system.
Ingredients-

Peanuts 1 Cup
Jaggery 1 Cup
Almonds 1/3 Cup
Cashews 1/3 Cup
Flax Seeds 1/4 Cup
Pumpkin Seeds 1/4 Cup
Directions-
Take a pan with thick bottom and roast Peanuts, Almonds, Cashews, Flax Seeds and Pumpkin Seeds separately on low to medium flame.
Here at this step you need to make sure that Peanuts are roasted well and they are crunchy. Other ingredients will not take much time for roasting.
Now let these ingredients cool down completely.
Add above ingredients to a mixer/grinder jar along with jaggery and run your mixer/grinder to form coarse or fine consistency. I personally prefer grinding it to a fine consistency as it allows me to make laddus easily.
Now the laddu mixture is ready. Make small laddus of the mixture.
Tip- If you are not able to make laddus, try adding few drops of clarified butter/Ghee or milk.
you can add/replace almonds or cashews with walnuts. If you have no time to make laddus then eat above prepared mixture as sweet dish with spoon. Good as an evening snacks for kids.
As summer is on its way go easy on go easu on these laddus. one laddu per day is a good choice.
