Many of us usually get bored of eating beetroot as old fashion salad. So here is very quick and low calorie Beetroot Raita for you.

Ingredients-
1 Grated Beetroot (Medium Size)
Curd 2 Tbsp
Green Chili 1
Curry Leaves
Mustard Seeds
Salt as per taste
Finely Chopped Coriander
Oil or Ghee for Tempering(Tadka)
Sugar (Optional)
Directions-
In a bowl, add grated Beetroot, Curd, Salt and Coriander. Mix these ingredients well with the help of spoon.
Now heat up the tempering/tadka pan (chhoti kadhai), add little ghee in it. wait for few seconds, then add Mustard Seeds, Curry Leaves and Green Chili in it.
Once the Mustard Seeds starts crackling turn of the heat.
Now add this tempering to the Beetroot Raita.
Mix well and serve it with your favorite meal of the day.
